Across in-depth modules you'll learn the legal responsibilities of a food supervisor (Food Safety Act 1990, the Food Safety and Hygiene (England) Regulations 2013, due diligence, EHO enforcement and the Food Hygiene Rating Scheme), how foodborne pathogens grow and cause illness (FAT TOM, the danger zone, spores, toxins and the key organisms — Salmonella, Campylobacter, E. coli O157, Listeria, Clostridium perfringens, Bacillus cereus and Staph aureus), how to identify and control all four types of contamination (microbiological, physical, chemical and allergenic), temperature controls from delivery and cooking through hot holding and chilling to cooling and reheating, and how to implement and run a HACCP-based food safety management system including Safer Food Better Business (SFBB) — brought to life with branded diagrams, decision flowcharts and realistic UK supervisor scenarios. You'll also cover personal hygiene and the 48-hour exclusion rule, how to write and verify cleaning schedules, what to look for in your premises and pest controls, and how to maintain records that give the business a credible due-diligence defence. Every module closes with a knowledge check to lock in understanding before you move on.
Finish with a scenario-based final assessment (80% to pass, unlimited attempts, every answer explained) and earn your Certificate of Completion.

How long is the certificate valid, and when should I refresh?
The certificate does not carry a fixed expiry, but food safety knowledge should be kept current. Many employers expect supervisors to refresh every three years or sooner if regulations, your menu or your procedures change.
Who is this course for?

Is this Level 3 course accredited or recognised?
